Atomic-Infused Quick Pickled Onions

Ingredients

  • 1 large red onion, thinly sliced

  • ½ cup white vinegar

  • ½ cup rice wine vinegar

  • ½ cup water

  • 1 tablespoon Atomic Horseradish

  • 1 teaspoon peppercorns

  • 1 teaspoon coarse salt

  • 1 teaspoon sugar

Instructions

1. Prep the Onion

  • Thinly slice the red onion and set aside.

2. Make the Pickling Liquid

  • In a small pot, combine white vinegar, rice wine vinegar, water, Atomic Horseradish, peppercorns, salt, and sugar.

  • Simmer over medium heat for about 10 minutes, until everything is dissolved.

  • Remove from heat and let cool slightly.

3. Assemble and Store

  • Place onions in an airtight container.

  • Pour the cooled pickling liquid over the onions until fully covered.

  • Refrigerate for at least 1 hour or overnight for best flavor.
