Smoked Salmon Rosti with Atomic Dill Sauce

Ingredients

Dill Horseradish Sauce
  • 1 cup sour cream
  • 1 tbsp Atomic Horseradish
  • 2 tbsp fresh dill
  • 2 tsp lemon juice
  • A dash of red wine vinegar
  • Salt
  • Pepper
Rosti
  • 4 cups frozen hash browns, thawed
  • 1 egg
  • 1 egg white
  • 4 tbsp flour
  • Salt
  • Pepper
  • 4 tbsp ghee or peanut oil

Instructions

  1. Make the sauce
  • Mix sour cream, Atomic Horseradish, dill, lemon juice, red wine vinegar, salt, and pepper until smooth.
  • Refrigerate until ready to serve.
  1. Prepare the rosti mixture
  • Mix hash browns, egg, egg white, flour, salt, and pepper until well combined.
  1. Fry the rosti
  • Heat ghee or peanut oil in a pan over medium-high heat.
  • Scoop ¼ cup of the mixture per rosti, flatten slightly, and fry for 3-4 minutes per side until golden brown.
  • Transfer to a paper towel-lined plate.
  1. Assemble & serve
  • Top each rosti with a dollop of sauce and a slice of smoked salmon.
  • Serve immediately.
