Ingredients
- 1 large red onion, thinly sliced
- ½ cup white vinegar
- ½ cup rice wine vinegar
- ½ cup water
- 1 tablespoon Atomic Horseradish
- 1 teaspoon peppercorns
- 1 teaspoon coarse salt
- 1 teaspoon sugar
Instructions
1. Prep the Onion
- Thinly slice the red onion and set aside.
2. Make the Pickling Liquid
- In a small pot, combine white vinegar, rice wine vinegar, water, Atomic Horseradish, peppercorns, salt, and sugar.
- Simmer over medium heat for about 10 minutes, until everything is dissolved.
- Remove from heat and let cool slightly.
3. Assemble and Store
- Place onions in an airtight container.
- Pour the cooled pickling liquid over the onions until fully covered.
- Refrigerate for at least 1 hour or overnight for best flavor.
