Morehouse Golden Fried Fish
Ingredients:
- 1 ½ to 2 cups peanut oil
- 2 cups plain yellow cornmeal
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon cayenne pepper (optional, for a kick)
- ½ cup Morehouse Yellow Mustard
- 6 medium raw white fish fillets (such as cod, halibut, catfish, or tilapia)
- Salt and pepper, to taste
- Fresh parsley and/or lemon wedges for garnish (optional)
Instructions:
- Season the Fish
Season both sides of the fish fillets with salt and pepper. - Prepare the Oil
Pour peanut oil into a deep skillet or frying pan, about 1 inch deep. Heat oil over medium-high heat, or until a small pinch of cornmeal sizzles when dropped in. - Prepare the Coating
In a shallow dish, mix the cornmeal, 1 teaspoon salt, garlic powder, paprika, onion powder, and cayenne pepper. In another dish, coat each fish fillet evenly with Morehouse Mustard. - Coat the Fish
Press each mustard-coated fillet into the seasoned cornmeal mixture, ensuring both sides are evenly coated. Shake off any excess. - Fry the Fish
Carefully place the coated fillets into the hot oil, working in batches to avoid overcrowding. Fry for 3-5 minutes per side, or until golden brown and crispy. Remove and place on a wire rack or paper towels to cool slightly and drain any excess oil. - Serve
Garnish with fresh parsley and lemon wedges, if desired. Serve hot with your favorite sides.
