Morehouse Golden Fried Fish

Ingredients:

  • 1 ½ to 2 cups peanut oil
  • 2 cups plain yellow cornmeal
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional, for a kick)
  • ½ cup Morehouse Yellow Mustard
  • 6 medium raw white fish fillets (such as cod, halibut, catfish, or tilapia)
  • Salt and pepper, to taste
  • Fresh parsley and/or lemon wedges for garnish (optional)

Instructions:

  1. Season the Fish
Season both sides of the fish fillets with salt and pepper.
  2. Prepare the Oil
Pour peanut oil into a deep skillet or frying pan, about 1 inch deep. Heat oil over medium-high heat, or until a small pinch of cornmeal sizzles when dropped in.
  3. Prepare the Coating
In a shallow dish, mix the cornmeal, 1 teaspoon salt, garlic powder, paprika, onion powder, and cayenne pepper. In another dish, coat each fish fillet evenly with Morehouse Mustard.
  4. Coat the Fish
Press each mustard-coated fillet into the seasoned cornmeal mixture, ensuring both sides are evenly coated. Shake off any excess.
  5. Fry the Fish
Carefully place the coated fillets into the hot oil, working in batches to avoid overcrowding. Fry for 3-5 minutes per side, or until golden brown and crispy. Remove and place on a wire rack or paper towels to cool slightly and drain any excess oil.
  6. Serve
Garnish with fresh parsley and lemon wedges, if desired. Serve hot with your favorite sides.

Enjoy your crispy and flavorful fried fish!
